Have you always wanted to make that perfect Beef Roast? Well look no further because I have finally perfected my recipe! With simple ingredients you always have on hand you can create this mouth watering roast!
INGREDIENTS
1 medium sized Beef Roast
6-8 cloves Garlic
2-3 Olive Oil
Salt & Pepper
1 small onion, cut into slices
INSTRUCTIONS
Begin by trimming any large chunks of fat off of roast & preheat oven to 450F. Then prepare a roasting pan by lining it with a sheet of parchment (or spray with non-stick spray). Place the roast in the pan and using a small sharp paring knife cut small slits all throughout roast and place whole cloves of garlic in each slit. Then drizzle olive oil over the entire roast and finally give the roast a healthy sprinkling of salt & pepper.
Place roasting pan on the centre rack of the oven and brown the outside for 20 minutes (remember to set timer as this step is very important in creating a nice browned crust & you do not want to over cook it).
Once you have browned the outside of the roast remove from oven and add slice onion. Turn the heat down to 300F and return roast to oven, continue cooking for another 45 to 60 minutes. But be sure to check the temperature of your roast using a meat thermometer, you do not want the roast to be over 135F if you like a Medium Rare Roast!
Now once your roast is at your desired temperature, remove pan from oven and tent the roast with tinfoil and allow the roast to rest for at least 10-15 minutes before slicing.
Then enjoy! I like to slice it thin and eat the roast on buns with the roasted onions and garlic and dip it in Au Jus (which is Beef stock seasoned with left over juices from the beef roast and i usually add a little salt & pepper and a sprinkle of thyme. On the side i usally add a fresh Cesear Salad and a few French Fries for a classic Beef Dip Dinner.
