Vanilla Cupcakes

The perfect Vanilla cupcakes! I've been using this recipe since i started baking, that's how amazing it is! a A must try for sure! Spice them up by doing an exciting frosting, like a Raspberry or Chocolate Buttercream!

INGREDIENTS

1/2 cup Butter or Margarine, softened

1 cup White Sugar

2 Eggs

2 tsp Vanilla Extract


1 1/2 cup Flour

1 1/2 tsp Baking Powder

1/2 tsp Salt


3/4 Cup Milk


Begin by preheating oven to 350F and preparing a 12 cup muffin baking pan with cupcake liners.


Now in your upright mixer or with a hand mixer in a medium bowl, cream butter or margarine for 2-3 minutes until fluffy. Add in the sugar and mix until incorporated. Next adding in the eggs, ONE AT A TIME, scraping the bowl in between eggs to be sure everything is properly mixed together. Finally add in the vanilla, mixing for another minute.


In a separate bowl measure out flour, baking powder and salt. Mix together.


Measure out milk, but keep separate in its liquid measuring cup for now!


Now add a 1/3 of the flour mixture in with the creamed butter mixture, mixing until incorporated. Next 1/3 of milk, again mixing until incorporated. Continue this method of flour mixture and milk mixture until both are blended together with the creamy butter mixture. Your batter should be smooth and slightly runny. Using a medium scoop, portion out batter into your prepared cupcake liners. Bake for 15-20 minutes until cupcakes are golden brown and fluffy and an inserted tooth pick comes out cleanly. Let cool and then ice with you desired frosting!
